Away From Me

A big meal for lunch? No way! I cooked pancit canton for my family's lunch today. First day of the month of February and it's a busy day for my husband who should be taken care of when it comes to daily meals. My children loves noodles the way I cooked it, whether it's a Chinese chowmein, pancit palabok, pancit habhab, ordinary instant chicken or beef stir fry noodles, and then this pancit canton photo image above.

This is a very special pancit canton with assorted or variety of seafood: shrimps, scallops, squid, crab flakes and choice of veggies: cabbage, carrots.

It's easy to cook pancit canton. Just saute' first the 5 cloves of garlic and medium sized sliced onions on hot cooking oil in a frying pan or wok on high heat. Then drop all the seafood ingredients on the wok (add sliced pork or chicken optional), stir the ingredients and mix them with garlic and onions, sprinkle dash of salt and ground pepper). Pour lukewarm water (2 cups)  and boil all the ingredients for 5 minutes, stir, mix on and on then add the veggies. Taste test. Add dash of salt or 2 tbsp of soy sauce and taste according to the flavor you expected. Take all the ingredients out from the wok and placed the sauteed ingredients in a bowl (set aside) leaving the sauce (probably at least 1 1/2 cup) on the wok, then toss the farkay noodles (1 package preferably) . Cover the wok for few minutes until the noodles are cooked properly and then combine the seafood/veggies with the rest of the noodles. Mix them thoroughly. Serve hot. Squeeze keylime with much gusto.

Pancit canton is a special Filipino dish,  noodle specialty popularized by the Filipinos and probably originally introduced by the Cantonese (Chinese) from China. Or by the Italian Cantonese. lol. China is the cradle of civilization and anything that is made from China has been adopted by the Filipinos. China is the Motherland and the culture, heritage, ethnic background including the language that Filipinos borrowed from the ancient Chinese culture, tradition and customs.

However, when it comes to religion, Spain improvised the Filipino's religion, the way we worship God and how we abide to the one and only Faith that we are born with: Catholicism or Christianity.

When it comes to politics, the law and how government rule our way of life, we feel obligated to respect the Constitution of the Philippines that is similarly copied from the Constitution of the United States of America. After the 1900's, after the war Spanish war vs American war and after the national hero Dr. Jose P. Rizal was executed at the Bagumbayan Luneta, Philippines was under the rule of the Americans. Philippines become a "state" of the United States of America. History people! We can't erase that in Philippines History nor American History.

Fort Bonifacio was the Fort William Mackinley where American troops resided. It was the cavalry of horses, barracks, tents and the military stayed to build the best military camp ever. Year 1912 (my grandmother Honorata was born in 1912) the American Hospital was built. It was one of the biggest, first modern hospital in Philippines in 1912. American doctors, American nurses and few Filipina and Filipinos hospital workers worked there. Just a 10 minute drive from the hospital is the famous American Cemetery and the famous American Forbes Park where the elite wealthy American families live. It's no secret. This is not a secret. It's part of HISTORY.

It's probably a secret because some people cannot read or comprehend English language. They probably can't get rid of their local language and some of them still speak Spanish (Hablame en espanol).

For whatever reason why Philippines would rather be independent when we share the same Constitution with the US. Same message. Know why? Aristocractic background of those who were chosen to be the Philippine President in that period of time. Rich, powerful, educated in foreign lands, landowners, hacienderos, so be it that these Filipinos can govern their own land.

Truth is there is that clash with "mixed racial marriages."

There's that presence of elites and illiterates. It's hard to explain that to the great pretenders of being aristocrats and then suddenly embraced the ones who raped their grandmothers during the Japanese war.
No pun intended. It's crazy!

Now in this present generation, who must govern the Philippines? Yeah, we believe in the process of election, people vote and votes are counted. It's the people power sort of.

WE, THE PEOPLE!

So what's this electoral votes? Meant to disregard the popular votes because popularity cannot be the sum of all votes because there's that discrepancy. You can be popular when it comes to ratings on positive and negative impact survey. It's like a battery. You can be popular for being bad or you can be popular for being good. Famous for one thing and one thing only of making people sick. If you know what I mean. OMG! This is dragging for such a very long time and still people can't decide where they should relocate themselves. Don't blame another person if you didn't vote. The fault is yours because you didn't vote. Blame yourself not the one who won the election. It's your fault! So take your twisters and quake in the place where you want to go away from me.

MOVE ON. It's already February 2017. Looking forward to Springtime 2017. yey!
